Grilled Vietnamese Lamb Chops

This was my first time grilling lamb chops. I had no idea what to expect with this new-to-me cut of meat. I opened up the package and to my surprise, those babies were thick! Luckily these turned out so well I just had to share. And they are so easy...

Grilled Vietnamese Lamb Chops

Ingredients:

1 1/2 - 2 lbs. lamb chops, cut about 1" thick

2 cloves garlic, crushed

1-inch piece lemongrass

1 tbsp. soy sauce

1 tsp. brown sugar

1 tsp. lime juice

1/4 tsp. ground ginger

cilantro or basil, chopped (optional)

Directions:

Mix all ingredients in medium glass bowl with a tight fitting lid. Cover and refrigerate 8-24 hours.

Remove lamb chops from refrigerator and let come to room temperature. Preheat grill to high heat. Place chops on grill. Heat about 3-4 minutes per side for medium.

Remove from heat and let rest before serving. Top with fresh herbs, if using.
