Tomato Avocado Salad
I'm officially obsessed with this salad. It's basically salsa you eat with a spoon or fork, but that just means I love it even more! Sorry chips, this time it is low carb...
I eat this as a side dish for lunch, or spooned over eggs. (Sometimes I even eat it twice in the same day if I have no other uses for my avocado - yikes!)

Tomato Avocado Salad
2 large tomatoes, diced
1 avocado, pitted + peeled + diced
1 cucumber, peeled + diced
1/4 c. onion, diced
2 Tbsp. cilantro
1/4 tsp. garlic salt
In a small bowl, mix all ingredients until well blended.
As you stir, the avocado begins to soften and coats the tomatoes and cucumbers. Add another pinch of salt, if necessary.
