Here's What I'm Eating in 2016
Happy New Year! I've decided that this year (a leap year!) I am going to make 366 different recipes, including cocktails, by the time 2017 arrives. While only one new recipe per day doesn't seem like a lot, it defintely means I better keep my fridge and pantry full. Please help me keep encouraged by sending me any recipes that have become your favorites!
I've already began to keep tally. Here are a few of my favorites that I've come across so far in January:
Delicious Creamy Mashed Potatoes - leave it to the Pioneer Woman to make a comfort food like mashed potatoes even creamier!
Indian Chopped Salad - crap! This is that one recipe that I just want to make over and over again. Who cares about anything new?! This recipe alone could derail my year-long plan.
Beer Braised Chicken Thighs - this turned out to be a delicious, quick weeknight recipe. With "braised" in the name, I wasn't expecting these great flavors in such a short time.
Black Bean and Quinoa Enchilada Bake - wow! This recipe gets better and better the longer you let it hang out in the fridge. I made a big batch on Monday and ate it all week long for lunch.
