This Week's Recipes: Tuna & grapefruit, black beans, sprouts & bacon
My 2016 resolution of eating 366 different recipes is still on track. (I'd hope so since we're barely halfway through January!) Here were a few of my favorite recipes for the week.
Seared Tuna with Avocado and Grapefruit - this is one of my all time favorite salads. The creamy avocado, tart-sweet grapefruit, and the natural ocean-flavor of the tuna make it a winner. I also love this salad with crab. We'll visit that soon!
Brussels Sprouts with Bacon - I found a stalk of Brussels at the market. Like on-the-vine tomaotes, I'll go with the sprouts still on the stalk. I had them and some bacon and was ready to roll!
Black Beans - it sounds crazy but I've never made my own black beans. I always find the canned variety tasty and convenient. But I wanted to give it a whirl. Homemade are leaps and bounds better! I infused them with chicken stock and lots of spices while they simmered. I then finished with some fresh cilantro. The texture was awesome!
