This Week's Recipes: Chicken Zoodle Soup and Corn Maque Choux

Who loves to spiral vegetables? I do! I do! My spiraler is my new toy, and what a toy it is. I've been eating all sorts of vegetables cut into little spirals. The favorites are definitely cucumbers and zucchini, but I've got a long way to go to try them all.
Chicken Zoodle Soup - You could really substitute zoodles (zucchini noodles) into any recipe for chicken noodle soup, but this one is really good. I like that they use thighs.
Corn Maque Choux - It was a few days past Mardi Gras when I made this corny goodness. (Hey, the Broncos won the Super Bowl and the championship parade happened to land on Fat Tuesday. Two reasons to get out and celebrate!) I love Maque Choux and love it even more with the addition of Gulf shrimp. Try it!
