Fresh Salsa Mexicana
Even though I've published an entire book on salsas and dips, I can't help but want to try more and more! Here is a fresh, simple recipe I found in one of my thick Mexican cookbooks.
Fresh Salsa Mexicana
Adapted from 1,000 Mexican Recipes by Marge Poore
3 large tomatoes, chopped

1/2 medium white onion, chopped finely
2 serrano chilies, seeded + minced
3 Tbsp. fresh cilantro, chopped
1/2 tsp. salt
Mix all ingredients in a medium bowl. Let rest at room temperature for 30 minutes. Serve with tortilla chips.
