This Week's Recipes: Roasted Broccoli and Shrimp & Grits
I was sent an awesome mock mashed potatoes recipe made from cauliflower. I already had Shrimp & Grits on the back of my mind, so why not mock the grits with that same recipe? It turned out awesome!
Old Charleston-Style Shrimp & Grits - I skipped the bacon in this recipe since I thought the sliced sausage would be enough flavor when added to the shrimp. It was great without, but I'm sure it would fantastic with the bacon too. Skip the grits part of the recipe and use this next recipe instead.
Cauliflower "Mashed Potatoes" - This was awesome! I did add a bit of smoked gouda since I had to throw my guest off the trail of mock anything. Perhaps it's my food processor, but the texture turned out to be far more like grits than it did like mashed potatoes, which is why I love that substitution.
Oven Roasted Brocolli - I loved this recipe! It gave me a great excuse to use part of the brand-new block of Parmigiano Reggiano I just picked up.
